In plumbing the soul of the Washington region, researchers
have studied how we differ by race, by party affiliation, by
household income. But few have gazed intently into our refrigerators
and seen the divisions wrought by cheese.
Washingtonians tend to line up on opposite ends of the dairy
aisle, according to a study published this month in American
Demographics magazine. Some people are aficionados of Velveeta.
Others love brie.
In the rich and aromatic world of cheese, few are more
different -- or bigger cliches -- than Velveeta and brie.
Velveeta, mocked as Spam for vegetarians, is a mild processed
