It's an ongoing controversy. Is margarine really better for you
than butter? Is the flavor comparable? Does margarine put
Wisconsin's cows out of work?
That depends on whom you talk to . . . and when.
After years of hearing "Margarine is healthy butter kills," we
now read of studies showing that margarine while it is, to its
credit, cholesterol-free has its own share of dietary flaws (trans
fatty acids, to give them a name).
All of a sudden, butter is no longer public enemy No. 1 for the
nutritionally aware.
Butter lovers are charging joyfully out of their closets saying
"We knew it all the time!" While respecting the importance of
limiting fat in their overall diet, these cooks are ...
