When the temperatures turn bitter, fortify yourself with some
inner heat. Hot sauces made with cayenne, jalapeno or habanero
peppers are climbing the trend charts with boutique names like
Trappey's Bull Louisiana Hot Sauce, Cajun Sunshine, Tennessee
Sunshine, Yucatan Sunshine, Dat'l Do-it Datil Pepper Hot Sauce and
Frank's Original Redhot.
For desperate cooks, hot sauces carry a hidden benefit. If you're
in a hurry and forgot to plan ahead, marinated meat is out of the
question. The intense flavors of hot pepper sauces don't depend on
time to gather strength. Shake and saute. That's all there is to
it.
