Recipes everywhere are calling for fresh herbs. Although the most
popular herbs are available packaged in supermarket produce sections,
I never remember to pick them up as I'm whizzing through.
Fresh herbs are also expensive, and when I do splurge, they often
spoil before I can use the whole package. That's money down the
drain. So I find myself opting for the bottled dried.
However, exceptions do exist, even for desperate cooks. In some
recipes, fresh herbs add a bright raw flavor that dried can't match.
Today's Summer's Best Pasta is a good example. When you don't cook
the sauce, fresh herbs contribute the bulk of the flavor.
