Lemon outclasses all other fruits as a flavor enhancer and
low-sodium seasoning. A few drops of lemon juice or a sprinkling of
zest can wake up lackluster fare, infusing it with vibrant good
taste.
Although bottled lemon concentrates and extracts are handy, the
incomparable flavor of fresh lemon juice and zest more than
compensates for the few minutes they take to prepare.
Tips
Juicy lemons generally have thin skins and feel firm and heavy
for their size. Thick-skinned, lightweight fruit is likely to have
less juice.
A warm lemon is easier to juice than a chilled one. If you can't
wait for the fruit to warm to room temperature, microwave it at 50%
