The first time I encountered feta cheese, I was devouring a Greek
salad while watching the sunset at a waterfront restaurant in Tarpon
Springs, Fla. The very best of Greek food is available there because
of the large Greek community originally settled by immigrant sponge
divers.
After returning to the hustle and bustle of real life, I found
myself craving the rich, tangy flavor of that feta cheese as much as
I did the serenity of the Gulf Coast.
Feta cheese started finding its way atop everyday salads, into
soups that needed a lift and even over breads as a garnish. My
husband was beginning to wonder if he'd find feta pancakes on the
table one Sunday morning. My obsession never went that ...
