The refrain has echoed at America's dining tables for generations: "Eat your vegetables."

But, at best, most Americans eat no more than three servings a day, according to a U.S. Department of Agriculture study.

Mary Kimbrow, director of nutritional services at Zale Lipshy University Hospital in Dallas, says that's optimistic. "I think that most people don't even get two vegetable servings a day," the registered dietitian says.
