Most cooks can tell when something needs a little salt. A dash
of pepper. A pat of butter.
But a splash of vinegar?
It sounds so final. So sour.
And so it might be, if you overdoused with one of the grocery
store jugs that can double as a household cleanser.
But vinegar can provide the magical "something" that lifts foods
out of the ordinary the way a squeeze of lime jazzes up fajitas or
guacamole.
Acid cousins to lemon and lime juice, vinegars lend so much more
variety, adding spark to marinades, vegetables, salads even
desserts. And deglazing a pan with vinegar is the first step to
exquisite, easy sauces.
