Land of the Cheddarheads?
To anyone in the know about Wisconsin's cheese industry, this
foam- and football-inspired image of the state's most famous dairy
product is, well, grating.
Those chunks and blocks of cheddar, Colby and brick turned out en
masse may preserve our No. 1 place among cheese-producing states.
But the fact is, Wisconsin's cheesemeisters produce an impressive
array of classy specialty cheeses not to mention a few innovative,
offbeat products.
Last year, specialty cheeses constituted 25% of the state's total
cheese production, according to the Wisconsin Milk Marketing Board.
Production of specialty cheeses totaled 95 million pounds in 1994,
