Q: My low-fat substitutions for this recipe were a disaster. My
fat-free shredded cheddar did not melt. Thanks for your help!
Spinach Cheese Squares4 tablespoons (1/2 stick) margarine3
eggs1 cup flour1 cup milk1 teaspoon salt1 teaspoon
baking powder1 pound sharp cheddar cheese, shredded2 packages
(10 ounces each) frozen chopped spinach, thawed and well-drained
Preheat oven to 350 degrees. Place margarine in 13-by-9-inch
baking pan. Put pan in oven until margarine has melted, about 2
minutes.
In large bowl, whisk together eggs, flour, milk, salt and baking
powder. Stir in cheese and spinach; pour into prepared pan.
