You don't have to drive all the way to Vermont to buy pure maple
syrup. It's right in your own backyard. And the maple sap is
running.
Maple syrup is produced throughout Wisconsin, but more is produced
in the northern half. The sugar maple, the Wisconsin state tree,
and the black maple are the preferred trees to tap because their sap
is sweetest.
American Indians were the first to make maple syrup in North
America. They taught the explorers and settlers how to produce it.
The many steps in making maple syrup include tapping the trees,
gathering sap, boiling the sap down and bottling or canning the
finished product. It's a labor-intensive activity but well worth
the effort.
