One of the most popular dishes in Greek cuisine is shrimp with
tomatoes and feta cheese. Every bite delivers briny, tangy tastes.
The sauce is so seductive you need a hunk of bread to scoop up every
last morsel. This dish is great for winter nights when I want
something hearty, elegant and easy.
During a recent heat wave, I craved the mixture of shrimp, cheese
and tomatoes. However, the idea of eating a hot dinner was not
appealing.
My solution: turn the stew into a salad. Instead of the bread I
usually use as an accompaniment, I substituted rice-shaped orzo as
the starch base. Tomatoes, feta cheese and precooked shrimp are
tossed with the pasta and a sharp mustard-lemon vinaigrette ...
