For years, I've smuggled ground turkey into meatloaf, spaghetti
and chili con carne. I've finagled family into eating turkey franks
and sausage patties. Even turkey meatball stew.
But recently, I've become a turkey roast fan. Lean and lovely
boned half breasts, 11/2 to 2 pounds, are perfect for weekday
dinners. Although they take about 11/4 hours to bake, they require
very little of the cook's attention. Once the flavoring ingredients
are added and the bird is in the oven, most of the work is done.
It's the perfect amount for a small family, with four large or
six small servings. For a couple, there are luscious leftovers,
perfect for next-day lunches.
