Yiddish cousins of French crepes and Russian blini, blintzes are
delicate pancake packets with a sweetened and spiced cream cheese
filling. They're a standard, served with applesauce or preserves, at
delicatessens and bed and breakfast inns. A chafing dish filled with
blintzes makes a luxurious dessert with an assortment of elegant
toppings: a pitcher of warm fudge or raspberry sauce and bowls of
fresh berries and thick sour cream.
Preparing blintzes takes time but is no more challenging than
making crepes. Both are made from a thin, rich batter with a higher
proportion of eggs and milk to flour than for hotcakes. Unlike
