On the playing field of nutrition, dry beans line up as first-
string all-stars.
Beans are grouped in the U.S. Department of Agriculture's Food
Guide with such high-protein foods as meat, eggs, poultry and fish
and also with vitamin-rich vegetables. This double dose of nutrition
packed into beans makes them a "must have" for the way we want to eat
today.
Dry beans belong to the family of legumes that also includes peas
and lentils. (The term "dry beans" is used in the industry to include
varieties other than green beans and soybeans and includes either
