Potato pancakes provide taste of Germany

Jennifer Reisinger, Sheboygan, Kam M. Simonis, Mukwonago, and Jane
Wargin, Cudahy, sent recipes for potato pancakes as requested by
Vicki L. Johnson, New Berlin, who wanted a recipe for a German-style
pancake.
Reisinger wrote: "It has no fat in the recipe and uses real
potatoes as she desired. This is the basic recipe and can easily be
seasoned according to one's preferences. It is very old and came from
a book which has a copyright of 1940. This book was my Grandma's."
Simonis, a German teacher, wrote: "Here is an excellent potato
pancake recipe I've been using for years and it's German. I just like
to add parsley ...
