April's the perfect time for fresh tomato sauce

Fresh tomato sauce: It may seem an out-of-place topic for April.
But the reality is that I would rather be fussing over a homemade
tomato sauce on one of spring's cold, raw, rainy days than on a hot,
humid day in late summer.
Pasta covered with a fresh tomato sauce also appeals to my
appetite at this time of year, when winter's hearty roasts are too
stodgy and summer's salads are too light. With the year-round
availability of vine-ripened and hothouse tomatoes, there's no
shortage of fresh tomatoes in April, which means that I can give in
to my "fresh tomato sauce" urge, even if it's ...
