Small cheese plant is big on heritage

Gibbsville -- The bustling Gibbsville Cheese plant is as much a cornerstone of this quiet, rural hamlet as the local farm implement dealership.

The cheese plant's white metal exterior practically sparkles, beckoning customers inside.

The retail store that fronts the plant sells T-shirts touting cheese and plush Holstein cow toys that snore when you press their tummies. That's in addition to all the fine cheeses displayed in long coolers, many of them fresh from the factory, which employs 15 people.
