Intrigued by the growing varieties of specialty and artisanal
cheese but unsure about how to pull together a cheese course?
First, have fun. Try what interests you, and find a cheese counter
that allows you to taste and explore.
That's the advice of two experts, Janet Fletcher, author of "The
Cheese Course," and Steven Jenkins, author of "Cheese Primer."
Artisanal cheeses, which cost more than the so-called commodity
cheese you'll find in the dairy case, can be found at specialty shops
and grocery stores with cheese counters where cheese is sold ...
