I've always admired authenticity in food.

Some of the most delightful meals I've eaten were prepared by chefs who didn't compromise on ingredients, either importing them from other countries or making them from scratch to assure that their final dishes had the right flavor.

But when it comes to pizza, I'm not sure that producing an authentic product is the right thing to do, even if the ingredients are imported from Italy. Compared with their American cousins, Italian pizzas are bready and topped with only a minimum ...
