Just because you are watching your cholesterol doesn't mean that you can't have a great omelet. Egg whites make wonderful omelets with absolutely no cholesterol, and they are both high-protein and low- calorie to boot. What a deal!

One of my favorite local breakfast restaurants here in Atlanta, The OK Cafe, serves an egg-white vegetable omelet with Creole sauce that is excellent.
