Because desperate cooks don't need to spin their culinary wheels trying to figure out when to use fresh lemon juice and when to substitute frozen concentrated juice, here are our short and concise Lemon Juice Rules:

-- If you've planned to spend four hours cooking a gourmet meal, use fresh.

-- If the recipe has four or fewer ingredients, and one of them is lemon juice, use fresh.

-- When "lemon" appears in the name of the recipe, use fresh.

-- In every other instance, frozen concentrate makes a fine substitute.
