Preparing butter beans

When prepared well, butter beans live up to their name -- a tender shell with a melting, creamy interior.

Butter beans are a derivative of lima beans, a wonderful but much- maligned vegetable. When the limas are young and fresh, they have the familiar green color but as they age and are dried, they turn a creamy white color.
