Preparing butter beans

When prepared well, butter beans live up to their name -- a tender
shell with a melting, creamy interior.
Butter beans are a derivative of lima beans, a wonderful but much-
maligned vegetable. When the limas are young and fresh, they have the
familiar green color but as they age and are dried, they turn a
creamy white color.
Although the lima bean originated in South America, it is a staple
of diets in Africa and Asia. Butter beans are a larger variety that
are grown and used throughout Europe and the southern United States.
