Grana Padano wants to make a name for herself. She looks a lot like parmesan, she even has the same grainy texture, but her flavor is sweeter and more subtle than her robust relative.

Helping to pull the cheese out from the shadows and onto Americans' plates are a number of chefs and grocers who are touting the virtues of this inexpensive, versatile Italian staple.

The name of the cheese is derived from the word "grana" (grah- na), meaning grain, and "Padano" (pah-dah-noh), referring to Northern Italy's Po River Valley, where the cheese originates.
