Q: Could you please explain the differences between olive oil,
extra-virgin olive oil, light olive oil and any other olive oils
there are and the purposes/uses for each?
A: All olive oils are made only from green olives. However, the
flavor, color and consistency vary, depending upon different olive
varieties, location and weather. The nomenclature extra-virgin,
virgin and just olive oil indicate the grade of the oil, and that is
determined by how the oil was extracted.
Extra-virgin olive oil: Defined by Italian law, it is any olive
oil that has less than 1 percent oleic acid (a high level of free
