HE doesn't look like a bully, nor does he talk like one - most of the time. But ask Cafe 817 owner Sandro Rossi to change his perfect recipe for grilled panini, and Rossi becomes the panini-Nazi.

"Sometimes, they ask for more mustard or more cheese or something," says the Oakland chef. "No! We are very dogmatic about our panini. We have studied the balance of things and we know best. If they want us to change it, we tell them they are ruining the sandwich."
