Raspberry Squares
Makes 16 squares
Use the highest-quality raspberry jam you can find. The tart jam
offers a contrast to the almond-laced dough. Adapted from "Tate's
Bake Shop Cookbook," by Kathleen King (St. Martin's Press, 2005).
1 cup salted butter, at room temperature
1 cup sugar
1 egg yolk
3 cups flour
1 cup whole almonds, chopped
11/4 cups raspberry jam
Preheat the oven to 350 degrees. Lightly coat a 9-inch-square
baking dish with nonstick spray oil.
In a large bowl, cream the butter and sugar until they are well
combined. Add the egg yolk and mix. Add the flour and almonds and
blend well, but keep the mixture a bit crumbly and not too dry. Pat
