It's Italy's answer to flan. That's perhaps the best way to
describe panna cotta, a comforting silken custard showing up on
dessert menus these days.
The Inn at Little Washington and the Bleu Rock Inn, both in
Washington, Va., include panna cotta on their menus (the Inn has a
vanilla version, the Bleu opts for chocolate).
In Washington, D.C., panna cotta is frequently offered at
Galileo, and is a top-selling dessert at Isabella, where the creamy
custard gets a tangy, dramatic accompaniment of blood-orange
sections.
Basically made from sugar and cream bound together with a
touch of gelatin instead of eggs, panna cotta is a lighter
