OF ALL THE FOODS THAT TRIGGER MEMORIES OF CHILDHOOD, GRILLED
CHEESE SANDWICHES ARE AT THE TOP OF MY LIST. THEY'RE THE ULTIMATE
LITTLE-KID MEAL: SIMPLE TO MAKE, EASY TO EAT, AND PLEASING TO MOST
YOUNG PALATES. In the old days, the grilled cheese was a
predictable, uncomplicated affair: cheese (usually American), bread
(usually white), butter. But the old rules don't always apply any
more. Today, grilled cheese sandwiches often show up in unexpected
places, and in variations nothing like those served to
kindergarteners. Here's a sampling of the local offerings, from the
