Feta cheese has an enormous following, and not just among families
who lived or traveled around the Balkans. The same people who adore
olives usually go for feta. They ask where the cheese was made and
whether the milk came from a sheep or cow or goat (feta fans have
strong opinions on which animal's milk they prefer). Once sprinkled
only on Greek salads, feta is one of Greece's best-known exports. The
cheese is white and crumbly, shipped in a salty brine. If you buy
feta at a Middle Eastern market, you'll find it in huge bricks,
floating in that brine. Supermarkets sell feta in smaller blocks,
sometimes sealed in plastic to extend the shelf life. Once opened,
