Most people do not associate olive oil with baking. They think of
savory food, not sweets. But there is a rich tradition of baking with
olive oil derived from many countries. The results are both simple-
to-make and totally delicious.
While olive oil may have become a new American favorite, its use
in Mediterranean countries is legend. In Italy, Greece, Spain,
Portugal, and Turkey there is a history of desserts made with olive
oil (though frequently replaced over time with other fats by younger
generations trying to modernize classic recipes). Just as the olive
tree is woven into the history and religion of the people in these
