Winter meals in New England have always included fish cakes,
specifically codfish cakes made with salt cod, the preserved (salted
and dried) form of the fish that can keep for months if not years.
Fish cakes, like meatloaf, enabled thrifty cooks to stretch whatever
expensive protein was available with potatoes or bread crumbs.
Welcome to the 21st century, where foods of humble origin are
today's comfort foods. Now, fish cakes are enjoyed by rich and poor
alike, on the Atlantic coast and elsewhere, and all year long. But
hardly anyone uses salt cod anymore, except for New Englanders. For
the rest of us, fish cakes can be made with any of the white fishes
as well as salmon, tuna, bluefish, ...
