Pasta salads are an easy target. Consider the recent ad by the
National Cattlemen's Beef Association, stating: "No one ever left a
cookout wishing there'd been more macaroni salad."
Given the gloppy messes that often go by that name, the reputation
isn't unfounded. Too many pasta salads end up being tasteless
mixtures of overcooked pasta in a watered-down, overly sweet,
mayonnaise-laden dressing.
But it doesn't have to be that way. Barbara Lauterbach gets it
right in her new book, "Pasta Salad" (Chronicle), which amply
demonstrates the creative, healthful possibilities from combining
fresh vegetables, herbs, and, often, a mayo-less dressing with pasta.
