Green papaya is an essential ingredient in a refreshing Thai salad
made with a sweet and hot dressing and garnished with shrimp.
Although we've added ripe papaya to fruit salads and salsas for
years, green papaya is new to our kitchens. When the big, oval-
shaped fruit isn't ripe, its skin is all green and the firm flesh is
white - and deliciously crisp. (Ripe papaya, on the other hand, has
rich, golden-orange flesh and a green skin tinged with yellow.)
When Sheryl tasted the popular Thai salad at the new Belmont
restaurant Patou Thai, we became interested in green papaya. In the
