ALTHOUGH SUMMER IS WHITE WINE SEASON, SOMETIMES THE FOOD SCREAMS
FOR A RED. MOST RED WINES ARE UNAPPEALING WHEN IT'S HOT OUTSIDE
BECAUSE THE HEAT ACCENTUATES THE ALCOHOL AND WINES TASTE HEAVY.
CHILLING MOST RED WINES DOESN'T WORK BECAUSE IT BRINGS OUT THEIR
TANNINS, MAKING THEM ASTRINGENT. (TANNINS ARE NATURAL POLYPHENOLS
FOUND IN THE SEEDS AND SKINS THAT ACT AS A PRESERVATIVE AND ALLOW THE
WINE TO AGE). BUT SOME RED WINES, LIKE BEAUJOLAIS, CAN BE CHILLED
BECAUSE THEY ARE MADE FROM GRAPES NATURALLY LOW IN TANNIN.
