You use the perfect bread flour. You knead to optimal
elasticity. You let the dough rise slowly. Then, you bake with
steam. Or maybe you go to the nearest bread shop and buy a crusty
sourdough loaf. Your bread is a triumph, their bread is incredible.
What's left to go wrong?
Maybe nothing. If your bread is going to be devoured that same
day, it will be in peak condition -- soft, slightly moist crumb,
crisp chewy crust, a pleasant yeasty smell and taste.
