What it is: Cheddar cheese originated in England, but is now made
all over the world. Cheesemakers in Vermont are producing cheddars
that can compete with the very best. Grafton Village Cheese Company,
in fact, took home a bronze medal this month from the 2006 World
Cheese Awards in London, the largest competition of its kind, and
Cabot Creamery won a silver. Old World farmhouse-style cheddars are
generally bound in cloth and aged; they form a natural rind. New
World style cheddars are aged in the closed environment of wax or
plastic. Most cheddars are in the cellar for at least a few months,
