Article: Loaves Plus Fishes; Try a BLT & T (Bacon, Lettuce, Tomato . . . and Tilapia)

People have all kinds of reasons for not cooking fish at home. They think it smells. They're afraid they'll overcook it. Maybe they plain old don't like it. But some avoid fish because they think it's too expensive. To them I say, "Fish sandwich."

Nutritionists generally define a serving of fish as four ounces, tops. By itself, that four ounces doesn't look like much. But tuck it inside a good thick piece of French bread and suddenly you have something much more substantial-looking. A pound of fish can easily yield four servings, and no one will ask, "Is that all I get?"

No, they will be too busy chowing down on their Spicy Fried Catfish Sandwich, mounded with coleslaw, or polishing ...
