Every Halloween Linus goes to the pumpkin patch to watch for the Great Pumpkin. And every year he is disappointed. I feel enormous sympathy since every autumn I look for the great pumpkin on menus and I am usually disappointed. It seems pumpkin appears on American tables only as a pie, never in its native dress as a vegetable.

Pumpkin as a vegetable? Yes, it does very well as a vegetable on several continents. Africans make a chunky hot-and-sweet soup of pumpkin. In Italy tender ravioli pillows are filled with pumpkin.
