Every Halloween Linus goes to the pumpkin patch to watch for
the Great Pumpkin. And every year he is disappointed. I feel
enormous sympathy since every autumn I look for the great pumpkin on
menus and I am usually disappointed. It seems pumpkin appears on
American tables only as a pie, never in its native dress as a
vegetable.
Pumpkin as a vegetable? Yes, it does very well as a vegetable
on several continents. Africans make a chunky hot-and-sweet soup of
pumpkin. In Italy tender ravioli pillows are filled with pumpkin.
Both Burma and SriLanka boast spicy pumpkin curries. Thai cooks
serve pumpkin and beef cooked with red curry paste enhanced with
