Edna Lewis is an honest cook, a Southerner born in Freetown,
Virginia, in a community founded by her grandfather after
emancipation from slavery. She knows ham and pork and biscuits the
way we know cod and beans, and her food has been celebrated around
the country for its clear, simple tastes and strong character. With
