Richard Klein is a professor of French at Cornell who has
made something of a side career out of writing little books in
defense of unfashionable lost causes. The title of his previous
book, "Cigarettes Are Sublime," is self-explanatory. So, too, is
"Eat Fat."
Klein's method is to mix a little bit of scholarship, a little
bit of journalism, a little bit of autobiography and a whole lot of
whimsy. His aim, he says, "is not to convince but to charm," to
"cast a spell by conjuring a spirit -- a compelling voice,
repetitive, monotonous, as if from another world, that says over and
