Pantheon. 247 pp. $24 Richard Klein is a professor of French at Cornell who has made something of a side career out of writing little books in defense of unfashionable lost causes. The title of his previous book, "Cigarettes Are Sublime," is self-explanatory. So, too, is "Eat Fat." Klein's method is to mix a little bit of scholarship, a little bit of journalism, a little bit of autobiography and a whole lot of whimsy.
