Cheesecake is not nearly as ubiquitous as it once was, say five or even ten years ago. Time was a person couldn't go near a mom and pop style deli or an upscale gourmet take-out without tripping into a cheesecake that purveyors promised was the richest, gooey-ist, most outrageous cheesecake ever consumed.

Well, the hyperbole is gone. There is still cheesecake in bakeries and specialty shops, but the exaggerated claims have been put to rest. It may be that demand has diminished as cholesterol conscious consumers have turned to less conspicuously fattening desserts.
