Fresh mozzarella has a rich, milky quality, a mildness, and a low
melting point, which allows it to mesh with strong flavors. The
fresh variety, unlike the shredded processed form, adds a
sophisticated element to dishes. A simply assembled nibble of
melted mozzarella on toasted bread with roasted peppers and
anchovies is distinctive on the table. And a more complicated
effort of homemade lasagna with tomato sauce and ricotta is quite
grand. Here are several ideas for fresh mozzarella, which comes to
specialty and Italian markets from several local cheese makers.
