Consider grape leaves, an ideal appetizer or light main dish.
For those who've never sampled the Mediterranean and Middle Eastern
specialty, "grape leaves" are actually stuffed grape leaves --
succulent egg-roll-sized packages of rice, meat and veggies, folded
and rolled up into grape leaves (which are as big as iceberg lettuce
leaves) and cooked. Veggie versions omit meat and feature rice,
minced onions or scallions and herbs such as parsley and dill.
Sometimes pine nuts are added, along with other grains such as
barley.
Vegetarian grape leaves are a perfect spring dish -- festive,
light and healthful -- and generally served room temperature or cold.
