Hankering for full-throated spring makes me crave the freshest of
greens and the hottest of spices in equal amounts. Vietnamese
restaurants, known for nourishing noodle soups, also have some spicy
salads. Poppa and Goose, an imaginatively upscale Vietnamese
restaurant with downscale prices near Cambridgeside Galleria, has a
terrific version, enough to wake up the most deadened winter palate.
Fresh green papaya is shredded with carrot and lots of Asian basil
and cilantro, topped with Asian-style beef jerky and dubbed "Scent of
Green Papaya." When you first taste it, you notice the crunch and
