There is something undeniably comforting about egg salad. This quintessential picnic food boasts simple ingredients: hard-boiled eggs, mayonnaise, salt and pepper.

Despite the simplicity, it is not a dish many places do well. When done wrong it can be a disaster. Freshness counts, and we encountered our share of crusted-over salads.
