There is something undeniably comforting about egg salad. This
quintessential picnic food boasts simple ingredients: hard-boiled
eggs, mayonnaise, salt and pepper.
Despite the simplicity, it is not a dish many places do well.
When done wrong it can be a disaster. Freshness counts, and we
encountered our share of crusted-over salads.
Texture is also important. Too little mayonnaise, and it's dry.
Too much mayonnaise, which is more often the case, and you're dining
on a soup of the stuff with a few lone bits of egg white floating
around.
