Imagine a meal made from several of the world's most perfect foods
nestled together on a plate: long strands of al dente spaghetti
tossed with ripe plum tomatoes cooked in olive oil. It's a simple
dish, made even nicer when you sprinkle a nutty Parmigiano-Reggiano
on top. Take a deep whiff of the beautiful aromas, twist the strands
onto your fork, and dig in.
Now picture the dish without the cheese. Or, according to what
findings the government presents, picture life without Italy's finest
Parmesan and pecorino romano, France's Roquefort, Switzerland's
Gruyere, the British Cheddars, and our local Vermont Cheddars. Just
