If you're looking for a simple way to spruce up the ordinary
chicken breast, this is it. The chicken can be stuffed with the
herbed cheese in advance and refrigerated until baking time.
3 garlic cloves, minced
2 tablespoons chopped fresh sage leaves
1 1/2 tablespoons olive oil, plus more for coating the chicken
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 ounces goat cheese (in log shape), cut into 8 1/4-inch slices
4 chicken breast halves, rinsed and patted dry
