A great vinegar can make the simplest bowl of freshly picked
lettuces almost sing - even if you sprinkle the dressing ingredients
right onto the greens in a bowl. Drizzle the lettuces with oil, toss
them gently, then sprinkle with vinegar, salt, and pepper. The oil
clings to the greens and coats them with richness while the vinegar
adds pucker.
Vinegar has been around as long as wine (its name means "sour
wine"), which makes it one of the earliest cooking ingredients. One
imagines some wine turning into vinegar accidentally, probably
because the bottle was left open. The sour liquid seemed to thrill
spice-loving medieval cooks, who added it to many of their meat
dishes.
