Autumn is now here and it is time to succumb to the warming
earthy flavours that this season brings us.
Mushrooms are a must at this time of year. If you know what you
are doing then foraging is the way forward.
If in doubt visit your local farmers' market where they will
undoubtedly be available. There are also several instructive books,
courses and even mushroom walks on offer if you are keen to learn.
If foraging is not your thing then there are also many dried
mushrooms available and these can be reconstituted very easily by
soaking for 30 minutes. Then, combined with commercially grown
varieties they will add a wild flavour. Soaking is often done in
